More delicious meals with no mess...!

To carry on with our one pot wonders, holiday home cooking made easy series, we are bringing you the fritatta. The ultimate in one pot wonder dish, filling, delicious, healthy and cheap.


See the list below for possible combinations, it is endless and totally personal and up to your own imagination. Here are some of our favs.

Goat's Cheese & Spinach

Roasted Red Pepper & Feta

Garden Pea, Mint & Feta

Brie & Bacon

Potato, Bacon & Cheddar (although slightly cheating as you would have to boil the pots first!)

Masala Paste, Coriander and Tomato

Potato, Spring Onion and Dill

Roasted Vegetable and Goat's Cheese

Smoked Salmon, Pea and Broccoli

Serves 4

6 Free Range Eggs

1-2 Table spoons of Milk

At least 2 fillings of your choice

Salt and Pepper

-Pre heat oven to 180c

-If you are using bacon or anything that needs to be fried off first, do this now in the non stick oven proof pan that you will make your frittata in. Once cooked decant onto a plate.

-Let the pan cool a little then crack your eggs into the pan, give them a gentle whisk with a fork taking care not to scratch the pan.

-Add all the rest of the ingredients and turn up the heat, cook on high for 1-2 mins then turn down to medium for 2-3 mins or until the bottom is golden brown.

-Swril the pan around so that some of the egg mixture goes down the edges inbetween the set mixture and the pan edge.

-Bake the Frittata in the oven for 12-15 mins, ensuring that the middle is fully cooked. It always tastes better if you can leave it to cool for 10mins or so before eating.
